Step-by-Step Preparation Method
Step 1: Preparation of Aromatics
-
Thoroughly wash all fresh produce under cool running water. Organic ingredients are highly recommended, as the peel of the citrus fruit will sit in the vinegar for weeks.
-
Peel and chop or grate the ginger, turmeric, horseradish, and garlic.
-
Dice the onion, slice the citrus fruits thinly, and cut the hot peppers into rounds.(Note: Wear gloves when working with raw horseradish and spicy peppers to prevent eye or skin irritation).
Step 2: Layering in the Jar
-
Take a clean, wide-mouth 1-liter (quart-sized) glass jar.
-
Layer the prepared ginger, turmeric, garlic, onion, horseradish, citrus slices, peppers, herbs, and black peppercorns evenly inside the jar. Press down gently with a wooden spoon to pack the ingredients.
Step 3: Adding the Solvents
-
Pour the raw apple cider vinegar over the layered ingredients until everything is fully submerged. Ensure there is about 1 inch of head-space remaining at the top of the jar.
-
If using a metal lid, place a piece of parchment paper or plastic wrap over the mouth of the jar before screwing the lid on tightly. The acidic vinegar will corrode metal lids over time.
Step 4: Infusion Period (Fermentation)
-
Store the jar in a cool, dark place (such as a kitchen pantry or cabinet) for 2 to 4 weeks.
-
Shake the jar vigorously once per day for a few seconds to help circulate the active compounds and extract maximum flavor.
Step 5: Straining and Finishing
-
After 2 to 4 weeks, place a fine-mesh strainer or cheesecloth over a large glass bowl.
-
Pour the mixture into the strainer and press down firmly on the solids using the back of a spoon (or squeeze the cheesecloth) to extract every drop of liquid tonic.
-
Discard or compost the remaining pulp.
-
Stir in the raw honey until completely dissolved. Taste and adjust sweetness if desired.
-
Transfer the finished liquid tonic into a clean glass bottle or jar.
Flavor Intensity & Profile
-
Primary Flavors: Tangy, spicy, pungent, and earthy with citrus undertones.
-
Warmth Level: High heat intensity (due to raw horseradish, capsaicin, and gingerol).
