Chicken with Spinach and Mushrooms

Intensity Matrix & Stage Breakdown

Understanding heat control is the key to mastering this dish. Follow this intensity guide during each phase:

  1. Sear Stage (High Intensity): Quick high heat to sear the chicken breasts and lock in moisture while creating a deep, caramelized outer crust.

  2. Sauté Stage (Medium Intensity): Medium heat to brown the mushrooms and soften aromatic garlic and shallots without burning them.

  3. Simmer Stage (Low Intensity): Gentle low heat to melt the cheese, wilt the spinach smoothly, and thicken the cream sauce without curdling.

Equipment Needed

  • Large heavy-bottomed skillet or cast-iron pan (12-inch recommended)

  • Meat mallet or rolling pin (for evening out chicken thickness)

  • Tongs

  • Chef’s knife and cutting board

  • Measuring cups and spoons

Ingredients

For the Chicken

  • 2 large Boneless, skinless chicken breasts (about 1.5 lbs / 700g), sliced horizontally into 4 thin cutlets

  • 1 tsp Italian seasoning (dried oregano, basil, thyme, rosemary)

  • 1/2 tsp Garlic powder

  • 1/2 tsp Paprika (sweet or smoked)

  • 3/4 tsp Sea salt

  • 1/2 tsp Freshly cracked black pepper

  • 2 tbsp Extra virgin olive oil

  • 1 tbsp Unsalted butter

For the Mushroom & Vegetable Base

  • 8 oz (225g) Cremini or baby bella mushrooms, sliced clean

  • 1 tbsp Unsalted butter

  • 1 small Shallot, finely diced

  • 4 cloves Fresh garlic, minced

For the Creamy Tuscan Sauce

  • 1/2 cup Low-sodium chicken broth (or dry white wine like Pinot Grigio)

  • 1 cup Heavy cream (or full-fat coconut cream for dairy-free)

  • 1/3 cup Sun-dried tomatoes in oil, drained and thinly sliced

  • 1/2 cup Freshly grated Parmesan cheese (aged Romano or Asiago works great too)

  • 3 cups Fresh baby spinach leaves, rinsed and dried

  • 1/2 tsp Red pepper flakes (optional, for a subtle gentle kick)

  • Fresh basil or parsley, chopped for garnish

Step-by-Step Instructions

Step 1: Prep and Season the Chicken

  1. Place the chicken cutlets between two sheets of plastic wrap. Gently pound the thickest parts with a meat mallet until all cutlets are an even 1/2-inch thickness. This ensures fast, uniform cooking.

  2. Pat the chicken completely dry with paper towels.

  3. In a small bowl, combine the Italian seasoning, garlic powder, paprika, sea salt, and black pepper. Evenly season both sides of the cutlets.

Step 2: High-Intensity Pan-Searing

  1. Place your large skillet over medium-high heat (High Intensity) and add 2 tablespoons of olive oil along with 1 tablespoon of butter.

  2. Once the oil glistens and the butter is foamy, place the chicken cutlets in the skillet in a single layer.

  3. Sear undisturbed for 4 to 5 minutes until a rich golden brown crust forms. Flip and cook for another 3 to 4 minutes until the internal temperature reaches 165°F (74°C) on an instant-read thermometer.

  4. Transfer the chicken to a plate, tent loosely with foil to keep warm, and set aside.

Step 3: Medium-Intensity Mushroom & Aromatic Sauté

  1. In the same skillet (keep all those delicious browned bits in the pan!), add the remaining 1 tablespoon of butter over medium heat (Medium Intensity).

  2. Add the sliced mushrooms in a single layer. Let them brown for 3 to 4 minutes without stirring constantly so they develop a golden color.

  3. Add the diced shallot and minced garlic. Stir frequently for 1 to 2 minutes until fragrant and translucent.

Step 4: Deglaze and Build the Cream Sauce

  1. Pour in the chicken broth (or white wine). Use a wooden spoon to scrape up all the flavorful caramelized bits (fond) stuck to the bottom of the pan.

  2. Allow the liquid to simmer for 2 minutes until reduced by half.

  3. Turn the heat down to medium-low (Low Intensity) and stir in the heavy cream and sliced sun-dried tomatoes. Let it simmer gently for 3 minutes until the sauce begins to thicken slightly.

Step 5: Wilt Spinach & Melt Cheese

  1. Lower the heat to low. Stir in the freshly grated Parmesan cheese until completely melted and smooth.

  2. Add the fresh baby spinach leaves in handfulls. Stir gently into the warm sauce for 1 to 2 minutes until the spinach is fully wilted yet retains its vibrant green color.

  3. Taste the sauce and adjust with salt, black pepper, or red pepper flakes to taste.

Step 6: Bring It All Together

  1. Return the seared chicken cutlets (along with any rested juices on the plate) back into the skillet.

  2. Spoon the creamy mushroom and spinach sauce generous over the chicken.

  3. Simmer together on low heat for 1 to 2 minutes to heat the chicken through.

  4. Remove from heat, garnish with freshly chopped basil or parsley, and serve warm!

Chef’s Storage & Reheating Tips

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

  • Reheating: Reheat gently in a skillet over low heat on the stovetop, adding a splash of milk or chicken broth to loosen up the cream sauce. Avoid high microwave heat, which can cause the dairy sauce to separate.

  • Freezing: Due to the heavy cream base, freezing is not recommended as the emulsion can break upon thawing.
