Intensity Matrix & Stage Breakdown
Understanding heat control is the key to mastering this dish. Follow this intensity guide during each phase:
-
Sear Stage (High Intensity): Quick high heat to sear the chicken breasts and lock in moisture while creating a deep, caramelized outer crust.
-
Sauté Stage (Medium Intensity): Medium heat to brown the mushrooms and soften aromatic garlic and shallots without burning them.
-
Simmer Stage (Low Intensity): Gentle low heat to melt the cheese, wilt the spinach smoothly, and thicken the cream sauce without curdling.
Equipment Needed
-
Large heavy-bottomed skillet or cast-iron pan (12-inch recommended)
-
Meat mallet or rolling pin (for evening out chicken thickness)
-
Tongs
-
Chef’s knife and cutting board
-
Measuring cups and spoons
Ingredients
For the Chicken
-
2 large Boneless, skinless chicken breasts (about 1.5 lbs / 700g), sliced horizontally into 4 thin cutlets
-
1 tsp Italian seasoning (dried oregano, basil, thyme, rosemary)
-
1/2 tsp Garlic powder
-
1/2 tsp Paprika (sweet or smoked)
-
3/4 tsp Sea salt
-
1/2 tsp Freshly cracked black pepper
-
2 tbsp Extra virgin olive oil
-
1 tbsp Unsalted butter
For the Mushroom & Vegetable Base
-
8 oz (225g) Cremini or baby bella mushrooms, sliced clean
-
1 tbsp Unsalted butter
-
1 small Shallot, finely diced
-
4 cloves Fresh garlic, minced
For the Creamy Tuscan Sauce
-
1/2 cup Low-sodium chicken broth (or dry white wine like Pinot Grigio)
-
1 cup Heavy cream (or full-fat coconut cream for dairy-free)
-
1/3 cup Sun-dried tomatoes in oil, drained and thinly sliced
-
1/2 cup Freshly grated Parmesan cheese (aged Romano or Asiago works great too)
-
3 cups Fresh baby spinach leaves, rinsed and dried
-
1/2 tsp Red pepper flakes (optional, for a subtle gentle kick)
-
Fresh basil or parsley, chopped for garnish
Step-by-Step Instructions
Step 1: Prep and Season the Chicken
-
Place the chicken cutlets between two sheets of plastic wrap. Gently pound the thickest parts with a meat mallet until all cutlets are an even 1/2-inch thickness. This ensures fast, uniform cooking.
-
Pat the chicken completely dry with paper towels.
-
In a small bowl, combine the Italian seasoning, garlic powder, paprika, sea salt, and black pepper. Evenly season both sides of the cutlets.
Step 2: High-Intensity Pan-Searing
-
Place your large skillet over medium-high heat (High Intensity) and add 2 tablespoons of olive oil along with 1 tablespoon of butter.
-
Once the oil glistens and the butter is foamy, place the chicken cutlets in the skillet in a single layer.
-
Sear undisturbed for 4 to 5 minutes until a rich golden brown crust forms. Flip and cook for another 3 to 4 minutes until the internal temperature reaches 165°F (74°C) on an instant-read thermometer.
-
Transfer the chicken to a plate, tent loosely with foil to keep warm, and set aside.
Step 3: Medium-Intensity Mushroom & Aromatic Sauté
-
In the same skillet (keep all those delicious browned bits in the pan!), add the remaining 1 tablespoon of butter over medium heat (Medium Intensity).
-
Add the sliced mushrooms in a single layer. Let them brown for 3 to 4 minutes without stirring constantly so they develop a golden color.
-
Add the diced shallot and minced garlic. Stir frequently for 1 to 2 minutes until fragrant and translucent.
Step 4: Deglaze and Build the Cream Sauce
-
Pour in the chicken broth (or white wine). Use a wooden spoon to scrape up all the flavorful caramelized bits (fond) stuck to the bottom of the pan.
-
Allow the liquid to simmer for 2 minutes until reduced by half.
-
Turn the heat down to medium-low (Low Intensity) and stir in the heavy cream and sliced sun-dried tomatoes. Let it simmer gently for 3 minutes until the sauce begins to thicken slightly.
Step 5: Wilt Spinach & Melt Cheese
-
Lower the heat to low. Stir in the freshly grated Parmesan cheese until completely melted and smooth.
-
Add the fresh baby spinach leaves in handfulls. Stir gently into the warm sauce for 1 to 2 minutes until the spinach is fully wilted yet retains its vibrant green color.
-
Taste the sauce and adjust with salt, black pepper, or red pepper flakes to taste.
Step 6: Bring It All Together
-
Return the seared chicken cutlets (along with any rested juices on the plate) back into the skillet.
-
Spoon the creamy mushroom and spinach sauce generous over the chicken.
-
Simmer together on low heat for 1 to 2 minutes to heat the chicken through.
-
Remove from heat, garnish with freshly chopped basil or parsley, and serve warm!
Chef’s Storage & Reheating Tips
-
Storage: Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
-
Reheating: Reheat gently in a skillet over low heat on the stovetop, adding a splash of milk or chicken broth to loosen up the cream sauce. Avoid high microwave heat, which can cause the dairy sauce to separate.
-
Freezing: Due to the heavy cream base, freezing is not recommended as the emulsion can break upon thawing.
