Ingredients
To achieve the dense, fudge-like consistency while keeping the protein content high, exact ingredient ratios are essential.
Dry Ingredients
-
1.5 cups (150g) Rolled oats (blended into fine oat flour)
-
1 cup (120g) Chocolate whey or casein protein powder
-
0.5 cup (45g) Unsweetened Dutch-processed cocoa powder
-
0.25 cup (30g) Coconut flour (provides structure and absorbs moisture)
-
0.25 tsp Fine sea salt
Wet Ingredients
-
0.75 cup (190g) Smooth natural peanut butter or almond butter (single-ingredient, well-stirred)
-
0.5 cup (120ml) Pure maple syrup or sugar-free monk fruit syrup
-
0.33 cup (80ml) Unsweetened almond milk (plus 1–2 tbsp if needed to bind)
-
1 tsp Pure vanilla extract
Chocolate Fudge Topping
-
0.5 cup (90g) Dark chocolate chips (70% or higher, or sugar-free chocolate chips)
-
2 tbsp (32g) Smooth natural peanut butter
-
1 tbsp Unsweetened almond milk
Step-by-Step Instructions
Step 1: Prepare the Pan & Dry Base
-
Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
-
In a large mixing bowl, whisk together the oat flour, chocolate protein powder, Dutch-processed cocoa powder, coconut flour, and sea salt until completely uniform and free of lumps.
Step 2: Combine Wet & Dry Mixtures
-
Add the smooth peanut butter, maple syrup, unsweetened almond milk, and vanilla extract directly into the dry ingredient bowl.
-
Using a sturdy spatula or wooden spoon, mix vigorously until a thick, cohesive dough forms. If the mixture feels too dry or crumbly, add an extra tablespoon of almond milk at a time until it holds together easily without becoming sticky.
Step 3: Press into the Pan
-
Transfer the protein fudge dough into your prepared 8×8-inch pan.
-
Firmly press the dough into an even, flat layer across the bottom of the pan. Use the flat bottom of a measuring cup or a straight-edged glass to compact the dough thoroughly. A tight compaction yields a dense, fudgy texture once chilled.
Step 4: Melt & Spread the Fudge Layer
-
In a small microwave-safe bowl, combine the dark chocolate chips, peanut butter, and 1 tablespoon of almond milk.
-
Microwave in 20-second intervals, stirring thoroughly between each burst, until the chocolate is completely melted and glossy.
-
Pour the chocolate topping evenly over the pressed bar layer and smooth it out with a spatula.
Step 5: Chill & Set
-
Place the baking pan into the freezer for 45 minutes (or in the refrigerator for at least 2 hours) until the top chocolate layer is completely set and the base is firm.
-
Lift the fudge block out of the pan using the parchment paper overhang.
-
Place on a cutting board and slice into 10 equal bars using a sharp knife dipped in hot water and wiped dry between cuts.
