Equipment Needed

  • Heavy cast-iron skillet (12-inch preferred)

  • Fine-mesh sieve or colander

  • Shallow dish or bowl for soaking

  • Tongs

  • Wire whisk

  • Measuring cups and spoons

Ingredients

For the Liver Soaking & Dredge:

  • Beef Liver: 1.5 lbs, sliced thin (approx. 1/4 inch thick)

  • Whole Milk or Buttermilk: 2 cups (for soaking)

  • All-Purpose Flour: 1 cup

  • Garlic Powder: 1 teaspoon

  • Onion Powder: 1 teaspoon

  • Paprika: 1/2 teaspoon

  • Black Pepper: 1/2 teaspoon (freshly cracked)

  • Fine Sea Salt: 1 teaspoon (divided)

For the Skillet & Gravy:

  • Sweet Yellow Onions: 2 large, sliced into 1/4-inch rings

  • Unsalted Butter: 3 tablespoons (divided)

  • Vegetable Oil or Lard: 2 tablespoons

  • Beef Broth or Stock: 2 cups (warm)

  • Worcestershire Sauce: 1 tablespoon

  • Fresh Thyme: 2 sprigs (optional, for garnish)

Step-by-Step Instructions

Step 1: Soaking the Liver

  1. Gently rinse the beef liver slices under cool water and pat them dry with paper towels. Check for any outer membrane (connective tissue) and gently peel it away if present.

  2. Place the liver slices flat in a shallow dish. Pour the whole milk or buttermilk over the slices, ensuring they are fully submerged.

  3. Cover and refrigerate for 30 to 60 minutes.

Step 2: Caramelizing the Onions

  1. Place a large cast-iron skillet over medium heat. Add 2 tablespoons of butter and 1 tablespoon of vegetable oil.

  2. Once the butter melts and foam subsides, add the sliced yellow onions and 1/2 teaspoon of salt.

  3. Cook the onions slowly for 12 to 15 minutes, stirring occasionally with a wooden spoon, until they turn soft, sweet, and deeply golden brown.

  4. Transfer the caramelized onions to a plate using tongs, leaving as much fat in the skillet as possible. Cover the onions loosely with foil to keep warm.

Step 3: Dredging and Searing the Liver

  1. In a wide bowl or pan, whisk together the all-purpose flour, garlic powder, onion powder, paprika, black pepper, and remaining 1/2 teaspoon of salt.

  2. Remove the beef liver from the milk bath and let the excess liquid drain off (do not rinse).

  3. Dredge each piece of liver in the seasoned flour mixture, shaking off any excess loose flour.

  4. Add the remaining 1 tablespoon of butter and 1 tablespoon of oil to the cast-iron skillet over medium-high heat.

  5. Once shimmering hot, place the dredged liver slices in the skillet in a single layer (cook in batches if necessary to avoid crowding).

  6. Sear for 2 to 3 minutes per side until a deep golden-brown crust forms.

  7. Remove the liver immediately and transfer it to the plate with the caramelized onions.

Step 4: Making the Rich Pan Gravy

  1. Lower the heat under the skillet to medium. Sprinkle 2 tablespoons of the leftover seasoned dredge flour into the remaining skillet oil/fat.

  2. Whisk constantly for 1 to 2 minutes to cook out the raw flour taste, creating a light brown roux.

  3. Slowly pour in the warm beef broth and Worcestershire sauce while whisking continuously to prevent lumps from forming.

  4. Bring the liquid to a gentle simmer. Allow the gravy to bubble for 3 to 5 minutes until thickened to a rich, glossy coating consistency. Taste and adjust salt or pepper as needed.

Step 5: Combining and Serving

  1. Return the caramelized onions and seared beef liver (along with any rested juices) back into the simmering skillet gravy.

  2. Spoon the warm gravy over the liver and onions and let everything heat together for 1 to 2 minutes.

  3. Remove from heat, garnish with fresh thyme sprigs if desired, and serve immediately alongside hot buttered mashed potatoes or grits.

Serving Suggestions

  • Classic Pairings: Serve hot alongside creamy garlic mashed potatoes, buttered rice, or Southern grits to catch every drop of the rich brown gravy.

  • Vegetable Sides: Pairs wonderfully with steamed collard greens, fried okra, or seasoned green beans.

  • Bread: Freshly baked buttermilk biscuits or skillet cornbread are essential for soaking up the remaining gravy.
