Total Active Time: ~1 hour
-
Marinating / Pickling Time: 24 hours (Minimum chill time before serving for best flavor depth)
Equipment Needed
-
Large heavy-bottomed saucepan or Dutch oven
-
2 clean 16 oz (pint-sized) glass Mason jars with airtight lids
-
Paper towels or clean dishcloths (for easy peeling)
-
Sharp chef’s knife and cutting board
-
Medium saucepan (for brine)
-
Measuring cups and spoons
Ingredients
Main Ingredients
-
2 pounds fresh medium beets (red, golden, or striped chioggia beets; tops trimmed to 1 inch, left unpeeled during boiling to retain color and juices)
-
1 cup water
-
1 cup raw apple cider vinegar (or distilled white vinegar for a cleaner, sharper bite)
-
2 tablespoons raw honey or pure maple syrup (replaces refined white sugar for a healthier sweetener)
-
1 teaspoon coarse sea salt or kosher salt
Warm Spices & Aromatics (Optional Flavor Boosters)
-
1 small yellow onion, thinly sliced
-
2 cloves fresh garlic, peeled and smashed
-
1 small cinnamon stick
-
4–5 whole cloves
-
½ teaspoon whole black peppercorns
-
½ teaspoon mustard seeds or coriander seeds
-
1 fresh bay leaf
Step-by-Step Instructions
Step 1: Prep and Boil the Beets
-
Wash the fresh beets thoroughly under cold running water to remove any dirt or debris. Trim the leafy greens, leaving about 1 inch of the stem attached (do not cut into the root end; this prevents the natural sugars and rich ruby juice from leaking into the water).
-
Place the whole unpeeled beets in a large pot and cover them with cold water by at least 1 to 2 inches.
-
Bring the water to a boiling boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot with a lid, and simmer gently for 30 to 40 minutes (depending on beet size).
-
Doneness Check: Piercing the center of a beet with a fork should feel tender yet slightly firm. Avoid overcooking so they retain a pleasant crisp texture.
Step 2: Peel and Slice
-
Drain the cooked beets and immediately transfer them into a bowl filled with ice water (an ice bath) for 5 minutes. This stops the cooking process and loosens the skins.
-
Under cool running water or using paper towels, gently slip the skins off using your thumbs. The outer skin should slide off effortlessly.
-
Cut off the stem and root ends. Slice the peeled beets into ¼-inch thick rounds, quarters, or bite-sized cubes based on your personal preference.
Step 3: Pack the Jars
-
Divide the sliced onions, garlic cloves, cinnamon stick, cloves, peppercorns, mustard seeds, and bay leaf evenly between two clean pint-sized glass jars.
-
Pack the sliced beets tightly into the jars, leaving about ½ inch of space at the top (headspace).
Step 4: Prepare the Healthy Pickling Brine
-
In a medium saucepan, combine 1 cup water, 1 cup apple cider vinegar, 2 tablespoons honey or maple syrup, and 1 teaspoon sea salt.
-
Set over medium-high heat and bring to a gentle simmer, stirring continuously until the salt and honey are completely dissolved (approx. 3–5 minutes).
-
Remove the brine from heat.
Step 5: Pour Brine & Seal
-
Carefully pour the hot liquid over the beets in each jar, ensuring all beet slices are fully submerged under the liquid. Leave about ½ inch of space at the top.
-
Tap the jars gently on the counter to release any trapped air bubbles.
-
Wipe the glass rims with a damp paper towel to ensure a clean seal.
-
Screw on the airtight lids securely.
Step 6: Chill and Pickle
-
Allow the sealed jars to cool completely to room temperature on the kitchen counter (about 45–60 minutes).
-
Transfer the jars to the refrigerator.
-
Patience is Key: While you can eat them after 3 to 4 hours, let the pickled beets sit in the fridge for at least 24 hours to absorb the spiced vinegar solution completely. The flavor improves significantly after 2 to 3 days!
Storage & Shelf Life
-
Refrigerator Storage: Store in airtight glass jars in the main compartment of your refrigerator.
-
Duration / Lasts For: 3 to 4 weeks when kept refrigerated continuously.
-
Note: This is a refrigerator pickling recipe (quick pickle method) and is not processed using hot water bath canning for long-term pantry shelf storage.
