Kitchen Equipment Needed

Before beginning, make sure you have the necessary canning tools and kitchen equipment assembled:

  1. Water Bath Canner (or a large, deep stockpot equipped with a bottom rack)

  2. 6 Pint-Sized Mason Jars with fresh self-sealing lids and screw bands

  3. Jar Lifter Tongs for safe jar extraction

  4. Canning Funnel (wide-mouth)

  5. Bubble Remover / Headspace Tool (or a non-metallic spatula)

  6. Large Non-Reactive Stockpot (stainless steel or enameled cast iron)

  7. Slotted Spoon & Ladle

  8. Cutting Board & Chef’s Knife

  9. Slotted Spoon / Blanching Basket & Ice Water Bath (for peeling tomatoes)

Equipment Prep & Intensity Scale

Intensity & Safety Parameters

  • Acidification Level: High (Essential for safe home water-bath canning)

  • Stove Intensity / Heat Output:

    • Tomato Blanching: High Boil (100°C / 212°F)

    • Salsa Simmering: Medium-Low Heat (Gentle bubble maintenance)

    • Jar Sterilization & Water Bath Processing: Rolling Boil (100°C / 212°F)

Ingredients

Main Salsa Base

  • 7 lbs (approx. 14–16 medium) Fresh Plum or Roma Tomatoes (peeled, cored, and finely chopped)

  • 2 cups Green Bell Peppers (finely diced)

  • 2 cups Yellow or White Onions (finely chopped)

  • 1 cup Jalapeño Peppers (seeded and finely diced; keep seeds for added heat)

  • 6 cloves Garlic (minced)

  • 1/2 cup Fresh Cilantro (leaves and tender stems, finely chopped)

Acid & Seasoning (Essential for Preservation)

  • 1/2 cup Bottled Lime Juice or Bottled Lemon Juice (Must use commercially bottled for consistent pH safety)

  • 1/2 cup Apple Cider Vinegar or White Vinegar (5% acidity)

  • 2 tsp Pickling Salt or Pure Sea Salt (avoid iodized table salt to prevent cloudiness)

  • 1 tsp Ground Cumin

  • 1/2 tsp Chili Powder

  • 1/2 tsp Black Pepper (freshly ground)

  • 1/2 tsp Sugar (optional, to balance acidity)

Step-by-Step Instructions

Step 1: Prep & Sterilize Canning Gear

  1. Wash jars, lids, and screw bands in warm, soapy water and rinse thoroughly.

  2. Fill your water bath canner half-full with water, place the jars inside, and heat over medium-high heat until hot (not boiling). Keep jars hot until ready to fill to prevent thermal shock and jar breakage.

  3. Place lids in a small bowl of hot (not boiling) water to soften the sealing gasket.

Step 2: Blanch & Peel Tomatoes

  1. Bring a large pot of water to a rolling boil over high heat. Prepare a large bath of ice water alongside it.

  2. Cut a small, shallow “X” into the bottom skin of each tomato.

  3. Lower tomatoes into boiling water for 30 to 60 seconds until the skin begins to split.

  4. Immediately transfer tomatoes to the ice water bath. Once cool enough to handle, slip off the skins, remove the cores, and chop the tomatoes coarsely into fine, salsa-sized pieces. Discard excess juice if a thicker salsa is preferred.

Step 3: Combine Ingredients & Simmer

  1. In a large, heavy-bottomed, non-reactive stockpot, combine chopped tomatoes, bell peppers, onions, jalapeños, and minced garlic.

  2. Stir in the bottled lime juice, vinegar, pickling salt, cumin, chili powder, black pepper, and optional sugar.

  3. Bring the mixture to a full boil over medium-high heat, stirring frequently.

  4. Once boiling, reduce the intensity to medium-low and simmer uncovered for 20 to 30 minutes, stirring occasionally until the vegetables are tender and the salsa reaches your desired consistency.

  5. Stir in the chopped cilantro during the last 5 minutes of simmering.

Step 4: Fill the Jars

  1. Carefully lift a hot jar from the water bath canner using jar tongs and drain any excess water.

  2. Place a wide-mouth funnel over the jar and ladle hot salsa into the jar, leaving 1/2-inch headspace at the top.

  3. Run a non-metallic bubble remover or spatula around the inside edge of the jar to release trapped air bubbles. Re-check and adjust headspace if needed.

  4. Wipe the rim of the jar thoroughly with a clean, damp paper towel to ensure no seeds or liquid interfere with the seal.

  5. Center a warm lid over the jar rim, apply the screw band, and turn until fingertip-tight (do not overtighten).

Step 5: Water Bath Processing

  1. Place filled jars back onto the rack inside the water bath canner. Ensure jars are fully submerged under at least 1 to 2 inches of water.

  2. Cover the canner with a lid and bring water to a full rolling boil over high heat.

  3. Once boiling vigorously, start your processing timer:

    • 0 – 1,000 ft elevation: Process for 15–20 minutes

    • 1,001 – 3,000 ft elevation: Process for 25 minutes

    • 3,001 – 6,000 ft elevation: Process for 30 minutes

    • Above 6,000 ft elevation: Process for 35 minutes

  4. After processing time completes, turn off the heat, remove the canner lid, and allow jars to sit undisturbed in the hot water for 5 minutes.

Step 6: Cooling & Storage

  1. Using jar lifter tongs, carefully remove jars from the canner without tilting them. Place them upright onto a towel-lined countertop with 1 inch of space between each jar.

  2. Allow jars to cool at room temperature undisturbed for 12 to 24 hours. You should hear a distinct popping sound as the jars seal!

  3. Test seals by pressing the center of each lid; if it stays flat and doesn’t flex, the jar is properly sealed.

  4. Store sealed jars in a cool, dark, dry place. Unopened canned salsa will stay fresh for up to 12 to 18 months. Once opened, keep refrigerated and use within 2 weeks.
