For the Liver Soaking & Dredge:
-
Beef Liver: 1.5 lbs, sliced thin (approx. 1/4 inch thick)
-
Whole Milk or Buttermilk: 2 cups (for soaking)
-
All-Purpose Flour: 1 cup
-
Garlic Powder: 1 teaspoon
-
Onion Powder: 1 teaspoon
-
Paprika: 1/2 teaspoon
-
Black Pepper: 1/2 teaspoon (freshly cracked)
-
Fine Sea Salt: 1 teaspoon (divided)
For the Skillet & Gravy:
-
Sweet Yellow Onions: 2 large, sliced into 1/4-inch rings
-
Unsalted Butter: 3 tablespoons (divided)
-
Vegetable Oil or Lard: 2 tablespoons
-
Beef Broth or Stock: 2 cups (warm)
-
Worcestershire Sauce: 1 tablespoon
-
Fresh Thyme: 2 sprigs (optional, for garnish)
Step-by-Step Instructions
Step 1: Soaking the Liver
-
Gently rinse the beef liver slices under cool water and pat them dry with paper towels. Check for any outer membrane (connective tissue) and gently peel it away if present.
-
Place the liver slices flat in a shallow dish. Pour the whole milk or buttermilk over the slices, ensuring they are fully submerged.
-
Cover and refrigerate for 30 to 60 minutes.
Step 2: Caramelizing the Onions
-
Place a large cast-iron skillet over medium heat. Add 2 tablespoons of butter and 1 tablespoon of vegetable oil.
-
Once the butter melts and foam subsides, add the sliced yellow onions and 1/2 teaspoon of salt.
-
Cook the onions slowly for 12 to 15 minutes, stirring occasionally with a wooden spoon, until they turn soft, sweet, and deeply golden brown.
-
Transfer the caramelized onions to a plate using tongs, leaving as much fat in the skillet as possible. Cover the onions loosely with foil to keep warm.
Step 3: Dredging and Searing the Liver
-
In a wide bowl or pan, whisk together the all-purpose flour, garlic powder, onion powder, paprika, black pepper, and remaining 1/2 teaspoon of salt.
-
Remove the beef liver from the milk bath and let the excess liquid drain off (do not rinse).
-
Dredge each piece of liver in the seasoned flour mixture, shaking off any excess loose flour.
-
Add the remaining 1 tablespoon of butter and 1 tablespoon of oil to the cast-iron skillet over medium-high heat.
-
Once shimmering hot, place the dredged liver slices in the skillet in a single layer (cook in batches if necessary to avoid crowding).
-
Sear for 2 to 3 minutes per side until a deep golden-brown crust forms.
-
Remove the liver immediately and transfer it to the plate with the caramelized onions.
Step 4: Making the Rich Pan Gravy
-
Lower the heat under the skillet to medium. Sprinkle 2 tablespoons of the leftover seasoned dredge flour into the remaining skillet oil/fat.
-
Whisk constantly for 1 to 2 minutes to cook out the raw flour taste, creating a light brown roux.
-
Slowly pour in the warm beef broth and Worcestershire sauce while whisking continuously to prevent lumps from forming.
-
Bring the liquid to a gentle simmer. Allow the gravy to bubble for 3 to 5 minutes until thickened to a rich, glossy coating consistency. Taste and adjust salt or pepper as needed.
Step 5: Combining and Serving
-
Return the caramelized onions and seared beef liver (along with any rested juices) back into the simmering skillet gravy.
-
Spoon the warm gravy over the liver and onions and let everything heat together for 1 to 2 minutes.
-
Remove from heat, garnish with fresh thyme sprigs if desired, and serve immediately alongside hot buttered mashed potatoes or grits.
Serving Suggestions
-
Classic Pairings: Serve hot alongside creamy garlic mashed potatoes, buttered rice, or Southern grits to catch every drop of the rich brown gravy.
-
Vegetable Sides: Pairs wonderfully with steamed collard greens, fried okra, or seasoned green beans.
-
Bread: Freshly baked buttermilk biscuits or skillet cornbread are essential for soaking up the remaining gravy.
