Ingredients

To achieve 0g Net Carbs, use high-quality zero-carb ingredients.

Wet Ingredients:

  • 8 oz (225g) Grass-Fed Unsalted Butter (or Beef Tallow / Ghee for strict carnivore option)

  • 4 Large Eggs (room temperature)

  • 1 tbsp Pure Vanilla Extract (optional; use zero-carb liquid vanilla or omit for zero-plant option)

Dry Ingredients:

  • 1 cup (100g) Pure Unsweetened Cocoa Powder (or Raw Cacao Powder; 100% pure chocolate liquor melted can also be used)

  • 3/4 cup (150g) Granulated Allulose or Liquid Stevia/Monkfruit (Allulose is highly recommended as it passes through the body unconsumed, resulting in 0g net carbs while providing real sugar-like caramelization and moisture)

  • 1/2 tsp Salt (Flaky sea salt or Pink Himalayan salt)

  • 1/2 tsp Unflavored Gelatin Powder or Egg White Powder (adds chewiness and stability without flour)

  • 1/2 tsp Baking Powder (aluminum-free)

Step-by-Step Instructions

Step 1: Prep & Preheat

  1. Preheat your oven to 350°F (175°C).

  2. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later. Lightly grease the paper with a small touch of butter.

Step 2: Melt the Fats & Cocoa

  1. In a heat-safe bowl set over a pot of simmering water (double boiler technique) or in short 30-second bursts in the microwave, melt the grass-fed butter (or tallow/ghee).

  2. Sift the unsweetened cocoa powder into the hot melted butter.

  3. Whisk gently until the cocoa powder fully dissolves into a smooth, glossy chocolate liquid. Remove from heat and allow to cool for 3–5 minutes so it is warm, not scalding hot.

Step 3: Whip the Eggs for Structure & Crackly Top

  1. In a separate large bowl, add the 4 room-temperature eggs and your sweetener of choice (granulated Allulose).

  2. Using a hand mixer or stand mixer fitted with a whisk attachment, beat the egg and sweetener mixture on high speed for 3 to 5 minutes.

  3. The mixture should double in volume, lighten in color, and form thick ribbons when the whisk is lifted. This step creates the signature paper-thin crackly brownie top without needing sugar or flour!

Step 4: Fold and Combine

  1. Gently pour the warm butter-cocoa mixture into the whipped egg mixture.

  2. Add the salt, vanilla extract, unflavored gelatin powder, and baking powder.

  3. Using a silicone spatula, gently fold the batter using wide, sweeping motions. Be careful not to deflate the whipped egg structure. Fold until just combined into a thick, luxurious batter.

Step 5: Bake to Fudgy Perfection

  1. Pour the batter into your prepared 8×8-inch baking pan and spread it evenly into the corners with your spatula.

  2. Place on the center rack of your preheated oven and bake for 22 to 25 minutes.

  3. Intensity Alert: Do not overbake! At the 22-minute mark, insert a toothpick into the center. It should come out with a few moist crumbs attached, not completely dry and not liquid.

Step 6: Cool & Set

  1. Remove the pan from the oven and place it on a wire cooling rack.

  2. Allow the brownies to cool completely in the pan at room temperature for at least 1 hour.

  3. For maximum fudginess and zero crumbling, place the pan into the refrigerator for 30 minutes before slicing. Use the parchment paper overhang to lift the brownie slab out onto a cutting board, then slice into 16 uniform squares using a sharp knife dipped in warm water.
