1 tbsp unsalted butter

½ tsp freshly cracked black pepper

1.5 lbs (680g) 80/20 ground beef
-
0.5 lb (225g) ground pork

2 large eggs (beaten)
-
1 tbsp Worcestershire sauce
-
1 tbsp Dijon mustard
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp dried thyme
-
1 tsp smoked paprika
-
1 tsp salt
-
½ tsp black pepper
For the Cheese & Wrap

-
½ cup ketchup
-
2 tbsp brown sugar (packed)
-
1 tbsp apple cider vinegar
-
1 tsp Dijon mustard
-
¼ tsp garlic powder
Step-by-Step Cooking Instructions
Step 1: Crisp the Bacon & Sauté the Mushrooms
-
Heat a large skillet over medium heat. Add the chopped bacon pieces and cook for 6–8 minutes until crispy. Remove the bacon with a slotted spoon and transfer to a paper towel-lined plate, reserving 1 tablespoon of bacon grease in the skillet.
-
Melt the butter into the skillet with the remaining bacon grease over medium-high heat.
-
Add the diced onion and chopped mushrooms. Sauté for 7–9 minutes until the mushrooms release their moisture, brown nicely, and shrink down.
-
Stir in the minced garlic, ½ teaspoon salt, and ½ teaspoon pepper. Cook for another 60 seconds until fragrant. Remove from heat and allow the mixture to cool down for about 10 minutes.
Step 2: Soak Breadcrumbs & Prep the Glaze
-
In a small bowl, combine the panko breadcrumbs and whole milk. Let sit for 5 minutes. This creates a soaked panade that locks moisture inside the meat.
-
In a separate small dish, whisk together the ketchup, brown sugar, apple cider vinegar, Dijon mustard, and garlic powder until smooth. Set aside.
Step 3: Mix the Meat Base
-
Preheat your oven to 375°F (190°C). Line a large rimmed baking sheet with aluminum foil and place a wire rack on top (or line a 9×5-inch loaf pan with parchment paper).
-
In a large mixing bowl, combine the ground beef, ground pork, soaked panko mixture, beaten eggs, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, dried thyme, smoked paprika, salt, and black pepper.
-
Add the cooled sautéed mushroom mixture, cooked chopped bacon, and shredded Swiss cheese to the bowl.
-
Using clean hands or a large spoon, gently mix the ingredients together until just combined. Do not overmix, as working the meat too heavily will cause the meatloaf to become dense and tough.
Step 4: Shape & Wrap in Bacon
-
Transfer the meat mixture onto the prepared baking sheet or pan. Form it into a uniform 9×5-inch log.
-
Take the remaining 8–10 bacon slices and drape them neatly over the meatloaf, tucking the ends slightly under the bottom so they stay secure during baking.
Step 5: Bake & Glaze
-
Bake uncovered at 375°F (190°C) for 45 minutes.
-
Remove the meatloaf carefully from the oven. Brush the top generously with the tangy brown sugar glaze.
-
Return to the oven and bake for an additional 20 to 25 minutes, or until an instant-read meat thermometer inserted into the thickest part of the loaf registers 160°F (71°C).
-
Optional Crisp Step: If you prefer extra-crispy exterior bacon, turn on the oven broiler for the final 2–3 minutes, keeping a close eye to avoid burning the glaze.
Step 6: Rest & Serve
-
Remove the meatloaf from the oven and allow it to rest on the counter for 15 minutes before slicing. Resting allows the internal juices to redistribute and gives the melted Swiss cheese time to set so it doesn’t run out all at once when cut.
-
Slice into thick portions and serve warm.
Chef’s Tips for Success
-
Use 80/20 Beef: Leaner beef (like 90/10 or 93/7) lacks sufficient fat content, which can lead to a crumbly, dry slice. The 80/20 mix paired with ground pork delivers optimal texture.
-
Cool the Mushrooms First: Never add hot sautéed mushrooms or warm bacon directly to raw meat and cheese, as heat will begin cooking the meat prematurely and prematurely melt the cheese.
-
Swiss Cheese Blocks vs. Pre-Shredded: Buying a block of Swiss cheese and shredding or dicing it yourself yields significantly better melting action than pre-shredded bagged cheese, which is coated in anti-caking starches.
