Step-by-Step Cooking Instructions

Step 1: Bake the Dark Chocolate Sponge

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.

  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, dark cocoa powder, baking powder, baking soda, and salt.

  3. Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.

  4. Incorporate Hot Liquid: Stir in the hot coffee or water using a spatula until the batter is thin and well incorporated.

  5. Bake & Cool: Pour into the prepared pan and bake for 22–25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan, then cut or break it into 1-inch bite-sized cubes.

Step 2: Prepare the Crimson Berry Compote

  1. Simmer Fruit: In a medium saucepan, combine the raspberries, cherries/strawberries, sugar, and lemon juice over medium heat. Bring to a simmer for 6–8 minutes until the fruit breaks down and releases its juices.

  2. Thicken: Stir in the cornstarch slurry. Continue cooking for 2–3 minutes while stirring continuously until the sauce thickens to a rich syrup consistency.

  3. Strain & Cool: Strain ¼ cup of the clear red syrup into a small bowl and set aside for final decorative blood drips. Transfer the remaining fruit compote to a glass bowl and allow it to cool completely before assembly.

Step 3: Mix the Vanilla Custard Layer

  1. Whisk Pudding: In a large bowl, whisk together the instant vanilla pudding mix, cold whole milk, heavy cream, and vanilla bean paste for 2 minutes until the mixture begins to thicken.

  2. Set: Cover and chill in the refrigerator for at least 15 minutes to set completely.

Step 4: Pipe White Chocolate Vampire Fangs (Garnish)

  1. Melt Chocolate: Melt the white chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.

  2. Pipe Shape: Transfer melted chocolate into a piping bag or small plastic sandwich bag with the tip cut off. Pipe classic pointy vampire fang shapes or small bat outlines onto a piece of parchment paper.

  3. Chill: Place in the refrigerator for 15 minutes until set hard.

Step 5: Whip the Cream & Assemble the Trifle

  1. Whip Cream: In a chilled bowl, whip 2 cups of heavy cream and ½ cup of powdered sugar until stiff peaks form.

  2. Layering Sequence:

    • Base Layer: Arrange half of the dark chocolate cake cubes evenly at the bottom of your 3-quart glass trifle bowl.

    • Berry Layer: Spoon half of the Crimson Berry Compote over the cake cubes, letting some drip down the interior sides of the bowl.

    • Custard Layer: Spread half of the vanilla bean custard smoothly over the berry layer.

    • Repeat: Add the remaining cake cubes, top with the remaining compote, and layer the remaining vanilla custard over the top.

  3. Top Coating: Spread or pipe the fresh whipped cream over the final custard layer.

  4. Decorate: Drizzle the reserved red berry syrup across the white cream to create a “blood drip” effect. Insert two white chocolate fangs side-by-side into the top of the cream to imitate a bite mark, letting extra berry liquid bleed out from the puncture points.

  5. Chill & Serve: Refrigerate for at least 4 hours (ideally overnight) before serving to allow the layers to soak and settle.
